Be sure to select "Star Wars: KOTOR (1024x768) Interface" from the game selection list as opposed to any other interface resolution when using the uniws patcher. Tick the box next to it and click on the Run button. After Wineskin is done with the task, close the window. These changes will allow KotOR's videos to show [mostly] correctly later on. Finally, in the main Wineskin window, click on the button that says Set Screen Options.1366x768 isn't supported by either KOTOR game. If you try to run it in that resolution, all of your dialogue options will be cut off due to the way the software tries to display that resolution value. Only a vertical resolution of 785 or higher is supported, so 1366x785 is the lowest similar resolution which is supported.The only way to make it work properly is to use UniWS in conjunction with HR Menus (there are some other widescreen support mods there also, but HR Menus is what you need) set in letterbox mode.
